I can hear you saying “Another zucchini recipe? Again?” I’m determined to make this undervalued vegetable the hit of this summer. Last summer’s hit was vegetarian zucchini stew for us and let’s discover new zucchini recipes and get the world love it more! I really want it to take place in everyone’s cooking because it is healthy and it is not tasteless as it is considered by most people. So I’m afraid this Easy Cheesy Zucchini will not be the last, I will share several more zucchini recipes this summer. Let me repeat my slogan: Don’t underrate zucchini, find the right recipe!
The skin of zucchini here is mostly light green and it almost loses that color when cooked. I was hooked when I saw a stand full of dark green zucchinis at bazaar and bought 2 kilos without thinking twice. I started to think what to make with them just as I got the bag from the vendor and I decided on two great sides even before leaving the bazaar. I think all those fresh fruit and vegetables gave me the inspiration I needed. I will share the other zucchini side very soon. Stay tuned!
Cheesy zucchini is one of my family’s favorite. Believe me this is the easiest recipe in the world! You just need three ingredients: olive oil, zucchini and cheese. If your cheese is not salty enough, add a little salt too to the list. The best part is that it is done in about 15 minutes.
I wanted to see that green color in the dish, so I left their skin on. I used kasar cheese and izmir tulum cheese, which has a salty and a bit tangy flavor. You can use your favorite cheese or a mixture of cheeses, just make sure you add a generous amount of it. Optionally, you can sprinkle a little black pepper on it.
No baking is needed for this easy-peasy cheesy zucchini recipe, it’s made on stove in a pan. I haven’t tried to bake it, could be great too, but it takes longer.
We have cheesy zucchini as a side dish paired either with meatballs but it can even be served as a dip. Just serve it warm with tortilla chips; I’m sure you will love it. This cheesy zucchini could even be used as a spread in sandwiches or burgers.

Easy Cheesy Zucchini
The easiest zucchini recipe ever! With just three ingredients.

Ingredients
- 1 tablespoon olive oil
- 2 cups grated zucchini
- ½ cup grated cheese of your favorite
Instructions
- Heat olive oil in a pan and toss in the grated zucchini.
- Cook over medium heat. Stir occasionally until it gets mushy.
- Now add the cheese leaving 3 tablespoon of it aside. Stir and cook for a minute or so until they are combined well.
- Bring it to the lowest and toss the rest of the cheese on the top. Cover the pan with its lid and wait for 1-2 minutes to let the cheese melt.
- Serve warm.

i'm a college student who really needs to lose the freshman 15 and just started my diet, I'm trying to cut out a lot of carbs and so I tried this along with some chicken for lunch and it was great.
